I cooked a whole meal!

Honestly, I belong to one of the pampered Gen Y Singaporeans, who don't have to cook. And I have never touched pots and pans and raw food etc, except at Home Economics classes in Sec 1.

So I am quite happy with myself that I managed to whip up 3 dishes for lunch for my family today. And all of them tastes good! Healthy and good.

I am looking for recipes, choosing my own food, and cooking on my own, as part of my healthy lifestyle movement. hahaha.

Here are the photos, and the ultra simple recipes that I bet every cooking mother knows.

Green Bean with Fish Slices

I love green beans! This fills up one plate. And my mother and I actually downed half each. Too delicious to resist.

5 long green beans --> Cut into 1 inch strips (or as preferred)
1 piece of Batang fish --> Remove bone in the middle, and slice each quarter thinly
4 tomato --> Cut each tomato into 1/6 (like orange), then 1/2 each of the 6 slices
Carrot (amount as you like it) --> Slice into 3mm thick round slices
2 x fragrant garlic (the small ones) --> Chop finely

Boil all these.

2 x tsp Bragg's Liquid Aminos --> Drip over and mix after served (like salad dressing)

Feelings: Super tasty despite not adding any oil, salt, soy sauce or pepper. Amazing. I think it's the effect of so much garlic. I can eat it without the Bragg's Liquid Aminos. But my family wanted more taste.

The colour is definitely there. And the eating texture is just heavenly. Soft green beans. Then comes the harder carrot. And wow, when the tomato goes in, *squirt*, juice pops into your mouth. The fish also varies the dish texture a lot. Drier, yet soft because it is sliced. (I used to hate Batang as it is super hard if you cook the entire quarter in porridge or whatever.)

Chawanmushi (Japanese Water Steamed Egg)

My ultra smooth melt-in-your mouth egg. As good as da pao from Mixed Vege stalls.

1 egg : 100ml of water (1 person 1 egg) --> Beat eggs then mix with water
Green pea (amount as you like it. Depends on how much each person wants to eat) --> Blend
Carrot (as you like it) --> Blend
1 tsp Bragg's Liquid Aminos
Pepper (as you like it. I think I put quite a lot.)
Pinch of salt (around 1/8 tsp)

Beat/blend everything together.
Sieve it until you think it's ultra smooth. (Using the blender should get you the texture.)
Steam 15min on low fire.

Feelings: This is heavenly! Like eating tau huay. Even my mother thinks it's better than her Chinese style steamed eggs. Ultra smooth, it shakes when you shake the bowl, like jelly, and then it melts in your mouth.

I don't have a blender yet, so I just pounded the green peas into paste. But this way, it couldn't blend into the egg, and will settle at the bottom.

I was so glad when my mother said my seasoning is just nice. Cos we have very different taste buds. And normally, my okay is extremely blend and tasteless for her. So I was afraid I didn't put enough pepper and liquid aminos... ...

Crab Meat Thick Gravy Tofu

Very nice dish whose taste can be seasoned according to how salty you like your food to be. My personal taste bud is the ultra sensitive kind (like my skin), so I always eat almost tasteless food. And complain that all outside food are too salty or too sweet. Love HOMECOOKED!

1 box silkened tofu --> Steam separately.
Crab meat (can be packed or fresh one) ratio: 1 : 1 serving of tofu --> Slice thinly down the round cross section
1 garlic finely chopped
1 tsp ginger finely chopped
water/crab meat liquid/water from steamed tofu (as much as you want your sauce to be. I put 1.5 inch high of my pot)
Pepper
Sesame Oil
2 tbsp cornflour mixed in 4 tbsp of water

Boil the water.
Put all the crab meat, garlic, ginger, in.
Season with pepper, sesame oil.
While it is boiling, keep stirring as you add the cornflour mixture in.
Stir and stir till it thickens (very fast), otherwise it will burn.

Turn fire off, and serve by pouring over tofu.
Slice tofu into 6 cubes to serve.

Both my mum and I actually felt really full after just finishing all these dishes. The only one we left is the egg, cos I made serving for 5-6 persons.

Probably, the only more guilty dish is the tofu. Since it has added flour and processed crab meat inside. Otherwise, the calories for these are really low. All done without oil. And all vege stuff.

I am just so glad I took to cooking after 9 years out of home econs class. =)))
